Beef Yakiniku & Chicken Teriyaki

Sebenarnya sy gak punya pengalaman dengan masakan2 Jepang. Tapi melihat byk resep2 Japanese Food yg simple, rasanya pengen nyoba jg.
Mirin dan sake, dua bahan masakan Jepang yg akhirnya bisa ikutan bergambung dgn botol2 perlengkapan masak-memasak gw. Seneng bgt rasanya nemuin ke-2 barang ini. Banyak resep yg dah lama pengen gw coba... akhirnya bakal kesampean. Sebenarnya keduanya adalah 'rice wine'/arak beras, yg membedakan adalah warna, rasa dan kandungan alkohol-nya.
Mirin is an essential condiment used in Japanese cuisine, with a slightly sweet taste. It is a kind of rice wine similar to sake, but with a lower alcohol content.
Sake is a Japanese word meaning "Japanese rice wine" (also called Nihonshu 日本酒) or "alcoholic beverage".

Kedua masakan ini sy buat u/ dinner di rumah, dan resepnya sy dpt dari Majalah Femina, dengan tema 'hidangan ala bento'.

Beef Yakiniku
500 gr daging sukiyaki*
2 sdm minyak u/ menumis
1 sdt minyak wijen
4 siung bawang putih, memarkan
150 gr bawang bombay, iris membujur
1 buah paprika hijau, belan 2 membujur, iris tipis melintang
75 ml air kaldu ayam
Saus, campur rata:
100 ml soy sauce
75 ml sake
50 gr gula pasir
4 batang daun bawang, ambil bagian yg putih, potong memanjang 2 cm
1 sdm kecap manis

1. Rendam daging dengan saus serendam selama 15 menit. Sisihkan.
2. Panaskan minyak dan minyak wijen, tumis bawang putih hingga harum. Tambahkan bawang bombay dan paprika, tumis sebentar. Tambahkan daging berikut saus perendamnya, aduk rata.
3. Tuangi air kaldu, aduk rata. Masak hingga daging matang dan air berkurang. Angkat.
4. Sajikan :)
*Daging Sukiyaki: Irisan daging tipis dengan sedikit lemak yg biasa digunakan u/ hidangan sukiyaki. Dpt diganti dengan daging sapi has dalam yg diiris melintang serat.

Chicken Teriyaki
500 gr fillet dada ayam potong memanjang 5x1x1 cm
200 gr bawang bombay, iris memanjang
5 siung bawang putih, memarkan
4 sdm minyak
1 sdt minyak wijen
Bumbu perendam, aduk rata:
75 ml soy sauce
2 sdm mirin
1 sdm sake
1 sdt jahe parut
2 sdm kecap manis
3 sdm gula pasir
1/2 sdt kaldu ayam bubuk

1. Rendam daging selama 30 menit dalam larutan perendam, sisihkan.
2. Panaskan minyak, tumis bawang bombay sebentar. Angkat, sisihkan.
3. Panaskan kembali minyak dan minyak wijen, tumis bawang putih hingga harum, masukkan bawang bombay, tumis hingga agak layu.
4. Masukkan ayam berikut saus perendamnya. Aduk rata.
5. Masak hingga daging matang dan saus perendam berkurang. Angkat, sajikan.

Salad (6 porsi)
300 gr wortel, kupas potong kecil memanjang, serut halus
200 gr lobak, kupas, serut halus
300 gr kol, buang tulangnya, iris halus
2 sdt garam
2 sdm gula pasir
2 sdm cuka
Saus: *
3 kuning telur, kocok lepas
1 1/2 sdt mustartd
300 ml minyak salad
4 sdt saus tomat
1 1/2 sdt gula pasir, larutkan dgn 1 sdm air panas
1/2 sdm air jeruk lemon
1/2 sdt garam
1/4 sdt merica bubuk
3 sdt saus sambal botolan
Pelengkap selada bokor
*Kalau mau simple... pake saus Thousand Island botolan ajah :).

1. Aduk rata serutan wortel dgn 1 1/4 sdt garam, 1 1/4 sdm cuka dan 1 1/4 sdm gula hingga lemas. Tiriskan, sisihkan.
2. Aduk arata serutan lobak dengan 3/4 sdt garam 1/2 sdm gula dan 3/4 sdm cuka hingga lobak lemas. Tiriskan, sisihkan.
Saus:
-Taruh kuning telur dan mustard dalam wadah. Aduk searah sambil tuangi minyak sedikit demi sedikit hingga adonan kental.
-Tambahkan semua sisa bahan, aduk hingga tercampur rata dan kental.
-Sajikan bersama sayuran.

Chocolate Oatmeal COOKIEs

Sebenarnya sy gak cukup rajin u/ bikin cookies. Tapi sejak minggu lalu anak2 udah minta dibikinin cookies... siapa coba yg bisa nolak permintaan polos kayag gitu? Sebenarnya Patricia pengen dibikinin Peanut Butter Cookies~mungkin kelezatannya masih kebayang2 terus :). Tapi setelah sy buka2 buku resep cookies, sy tawarin bikin chocolate oatmeal cookies ini. Awalnya dia ragu2... meragukan kelezatannya.
Akhirnya hari libur kemaren sy sempetin bikin cookies ini. Ternyata oh ternyata... anak2 doyan bgt. Bolak-balik ke wirerack u/ ngambil fresh from the oven cookies.
Satu catatan penting, menurut sy cookies ini agak kemanisan. 1 1/2 cup gula rasanya terlalu byk, sebaiknya dikurangi jadi 1 1/4 cup atau malah 1 cup ajah. Tapi kembali lagi, ini masalah selera. Menurut anak2 udah pas bgt manisnya!
Kacangnya, sy campur 1/3 cup campuran walnut dan pistacio (yg udah dicacah kasar dan di panggang bentar.

prep: 25 min, bake 8 min per batch
1 cup butter, softened
1 1/2 cup sugar
(reduce to 1 1/4 cup)
1 tsp baking powder
1/2 tsp baking soda
3 ounces unsweetened chocolate, melted & cooled
1 egg
1 tsp vanilla
1 1/4 cups all-purpose flour
1 1/2 cups quick cooking rolled oats
1 6-ounces package semisweets chocolate pieces~1 cup
Walnut halves
*instead of placing a walnut half on each cookie,
you can stir 2/3 cup chopped walnuts into the dough along with the chocolate pieces.

1. Preheat the oven to 375 F. In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add the sugar, baking powder, and baking soda; beat until combined, scraping sides of bowl occasionally. Beat in melted chocolate, egg, and vanilla until combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour, the rolled oats, and chocolate pieces with a wooden spoon.
2.Drop dough by slightly rounded teaspoons about 3 inches apart onto ungreased cookie sheets. Top each dough mound with a walnut half.
3.Bake for 8-10 minutes or until edges are firm. Transfer cookies to wire racks and cool.
*store at room temperature for up to 3 days or freeze fo up to 3 months.
