[Masak Bareng Yuk] Rawon

Uuuhh, baru bulan ke 2 di tahun 2009, saya nyaris gagal mengerjakan 'objective' yg saya tetapkan sendiri diawal tahun ini, yaitu selalu ikut serta dalam blog event 'Masak Bareng Yuk'. Saat vote untuk memilih jenis masakan apa yg akan dimasak bersama bulan February, saya sangat berharap pilihannya tidak jatuh pada rawon. Alasan utamanya, saya tidak yakin bisa menemukan keluak, yg jadi bahan utama masakan ini.
Oooahhh, ternyata si Rawon menjadi pemenang hasil poling. Sempet kepikir untuk pake bumbu instant Indofood yg tersimpan di lemari. Tapi kog penasaran juga, pengen buat semua dari bahan2 aslinya. Yeah, ini pertama kali saya membuat rawon dengan 100% bahan segar/alami.

Keluak... pagi ini, hanya beberapa menit setelah saya nulis di 'status' saya di FB kalau saya lagi nyari keluak, seorang tetangga nawarin. Thank you, Mbak Rahmi... ini lho hasilnya.

Hasilnya, segeerrr... enak banget. Disajikan malam ini untuk makan malam sekeluarga.
Rawon
sumber: Primarasa, Jajanan Jawa Timur.
Bahan:
400 gr daging untuk rawon
2000 ml air
1 cm lengkuas, memarkan
2 batang serai, memarkan
6 lembar daun jeruk
3 sdm minyak goreng
2 batang daun bawang, iris 1 cm (*tebel amat!)
Bumbu halus:
6 buah keluak, ambil isinya
6 butih bawang merah
3 siung bawang putih
2 buah cabai merah
2 butir kemiri
1-2 sdt ketumbar
1 cm kunyit
1 cm jahe
1 sdt terasi
1 1/2 sdt garam
1 sdt gula merah

Pelengkap:
100 gr taoge pendek (saya pake taoge panjang)
2 butir telur asin, belah dua (gak ada, saya pake telur rebus :))
Sambal terasi
Kerupuk udang (saya pake kerupuk tempe dong)

1. Taruh daging dan air dalam panci, jerang di atas api sedang hingga mendidih. Masukkan lengkuas, serai, dan daun jeruk, masak terus sampai daging empuk, angkat.
Keluarkan daging dari panci, tiriskan.
2. Potong-potong daging ukuran 1x1x2 cm. Ukur kaldunya sebanyak 1.250 ml. Masukkan kembali daging ke dalam panci kaldu. Jerang di atas api sedang.
3. Panaskan minyak goreng, tumis bumbu halus sampai harum. Masukkan daun bawang, aduk sebentar, angkat. Masukkan bumbu tumis ke dalam panci kaldu. Teruka memasak sampai mendidih, kecilkan apinya. Masak terus hingga seluruh bahan cukup matang, angkat.

4. Penyajian: Pindahkan rawon ke dalama mangkok saji, hidankan bersama pelengkap (taoge, telur, sambal dan kerupuk).
