[MasBar Yuk!] Sambal Oncom & Sambal Cibiuk Hijau

Sambal, menurut saya adalah makanan pelengkap ter-sexy yang pernah ada. Tempat kedua, diduduki oleh kerupuk. Setuju?
Saya sendiri sebenarnya bukanlah pencinta sambal sejati, karena pada dasarnya saya memang gak tahan makan pedes. Bukan karena perut yang gak kuat, tapi memang gak tahan kepedesan aja. Sambal 'segar' tidak selalu tersedia di meja makan kami, tapi tersedia sambal botolan dan sebuah pohon cabe di depan rumah :)
Nah, dalam rangka masak bareng bulan ini yang bertema 'Aneka Sambal Nusantara', sekalipun waktunya sangat mepet... saya berhasil mencoba 2 resep sambal baru. Maksudnya, sambal yang belum pernah saya buat sebelumnya. Entah beruntung, entah kebetulan, entah rejeki nomplok... saya menemukan potongan majalah Femina yang berisi 8 macam sambal nusantara di antara tumpukan contekan saya.

Kedua resep sambal yg saya pilih memiliki keunikan masing-masing.
Sambal Oncom, sudah jelas berbahan utama Oncom. Sambal yang berasal dari Bandung ini memiliki keunikan, semua bahannya dipanggang terlebih dahulu sebelum diulek dan dicampur. Aromanya sangat khas, rasanya... sangat lezat. Sebenarnya cukup disajikan dengan nasi putih dan kerupuk, cuma saya tambahkan tumis labu siam siang itu.

Sambal Cibiuk Hijau, pastinya berwarna hijau. Kata 'cibiuk' itu kog bikin penasaran yah. Di resep disebutkan kalau jenis sambal ini berasal dari Garut. Tergolong 'sambal mentah', karena semua bahan diuleg dan dicampur dalam keadaan mentah, tidak ada proses pemasakan sama sekali. Sangat berbeda dengan Sambal Oncom. Hasilnya... segar, unik, ...campuran terasi dan kencurnya cukup terasa. Sambal jenis ini adalah sambal pelengkap, jadi tentu perlu lauk pauk. Saya sajikan bersama tahu kuning goreng, kukusan terong, ikan asin dan kerupuk.

Sambal Oncom

Sambal Oncom

Bahan :
1 sdt garam
1/2 sdt gula pasir
200 gr oncom hitam, panggang, tumbuk kasar (saya pakai oncom 'orange' biasa)
100 ml air (saya tidak pakai)

Bumbu :
8 buah cabe merah keriting
5 buah cabe rawit
2 cm jahe
5 butir bawang merah
1 sdt terasi

Cara Membuat :
1. Bakar semua bumbu hingga keluar aromanya (maksudnya : harum gitu lho).
2. Haluskan bumbu bakar bersama garam dan gula pasir, aduk rata
3. Masukkan oncom. Tuang air sedikit demi sedikit sambil diaduk hingga tercampur rata.
Angkat. Sajikan.

Sambal Oncom

Untuk resep Sambal Oncom ini saya menggunakan oncom biasa (berwarna orange). Ini adalah hasil percobaan kedua. Percobaan pertama hasilnya agak kelembekan, maka itu saat mencoba yang kedua kalinya saya tidak menggunakan air untuk mengencerkan sambal.

Sambal Cibiuk Hijau

Bahan :
1 sdt terasi, bakar
2 sdt gula merah sisir
1 sdt garam
10 buah cabe rawit hijau
2 siung bawang putih
5 buah tomat sayur hijau
3 buah cabe hijau keriting
1 cm kencur
75 gr daun kemangi, petiki daunnya
1 sdm air jeruk nipis

Cara Membuat :
1. Haluskan terasi, gula merah dan garam.
Masukkan cabe rawit, bawang putih, tomat, cabe hijau, kencur dan daun kemangi, giling kasar.
2. Bubuhi air jeruk, aduk hingga rata.
Sajikan

*Tidak ada yang saya modifikasi dari resep ini, hanya jumlah kemanginya saya kurangi. Saya pakai setengahnya saja.

[Click] The Jumping Shallot

Jumping Shallot

I took this picture yesterday afternoon, while playing with my 'camera speed', shallots, water and my children. My daughter helped me to drop the shallots into the jar.
Unfortunatelly we started playing a bit late, no more bright light from Mr. Sun. As far as I could, I just used max speed 1/400s. Hopefully next time, we can play when the light is still enough therefore I can use 1/1000s speed to freeze the water splash and the flying objects.
At the end, my kids really enjoyed the beautiful late afternoon playing 'cooking'. They pretended to prepare 'Onion Juice'. I couldn't imagine how the taste is.
For me... ahaaa, I need to put the 'polarized filter' on my Christmas gift wish list :)) ...hmm 58 mm please.

Just in case you're curious, why my son wore his helmet. It's not because he worried his sister will throw the shallots to his head... He just got back home after riding his bike around our housing complex.

SLF : The Beauty of Red and White

Time goes-by so fast... After a hectic Indonesian President Election and Jakarta (JW Marriot & Ritz Carlton Hotel) Bomb Terror on last July, finally we celebrated Indonesian's 64th Independence Day peacefully, last week. It was great to have a long weekend :D
This is my second time celebrating the independence day with some foodie bloggers by presenting red and white food photos. Something that I've never thought before.

Red & White in Harmony

It's still clear in my mind, when I posted the 'Simple Red and White Menu' for 'Indonesian's Independence Day Event' last year. I chose Indonesian 'traditional menu' for my posting.
And now, one year later... I decide to use the popular Indonesian Dessert/Snack as my food photography object for the special edition of SLF during the month of August. The Beauty of Red and White, that's the theme for SLF this month. By now you should know why Red and White, correct? Both are the colours of Indonesian Flag. Red represents courage, while white represents purity of intent.

For the food; to represent the Red Colour, I chose Kue Ku (Moulded Glutinous Rice Cake with Mung Bean Filling). We can find this cake in red, pink or green colour in markets. Lupis Ketan (Steamed Glutinous Rice Cones) that is served with grated coconut and brown sugar syrup was choosen to represent the White Colour.
Because I live in Jakarta, ohooo... it's easy to find these Indonesian tidbits in local market. Just to let you know, I bought the cakes in my favorite 'Majestic Market', in Kebayoran area, South Jakarta. Easy peasy!

The Beauty of Red & White

For the props; I just used my old stuffs from my kitchen cupboard. Only the cake stand that I borrowed from my mom's kitchen. Hopefully I can borrow it forever :)
