Cappuccino BROWNIEs

Ini posting ke 4 'bertema' Brownies, ... setelah sebelumnya sy posting Express Brownies, Coconut Swirl Brownies dan Butterstcoth Brownies. Sy emang termasuk Chocolate Lover :) tapi sy menghindari makan chocolate dalam bentuk 'bar'... rasanya 'too much' u/ sy. Kalaupun beli coklat, sy pilih yg dalamnya ada biskuit atau wafernya, biasanya pilihan jatuh ke KitKat atau TakeIt. Hari ini pun pengeen bgt makan coklat2an, akhirnya browsing resep dgn target resep2 yg gak rumit pembuatannya.
Finally... nemu resep ini dari webnya Martha Stewart.
Brownies ini tipe 'fudge', padat spt cake yg bantat :) ...tapi yummy, nyoklat bgt.

Makes 16; Prep time: 15 minutes; Total time: 1 hour
1/2 cup (1 stick) unsalted butter, softened, plus more for pan
4 ounces unsweetened chocolate, coarsely chopped
1 1/2 cups sugar (sy pake 1 1/4 cups)
1 tablespoon instant espresso powder
2 teaspoons vanilla extract
4 large eggs, lightly beaten
1 cup all-purpose flour
3/4 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
3/4 cup semisweet chocolate chips

1. Preheat oven to 325°, with rack in center. Butter a 9-inch square baking pan, and line the bottom with parchment or wax paper. Coat paper with butter. Set aside.
2. In a large heatproof bowl, combine the butter and unsweetened chocolate, and place over a saucepan of simmering water, stirring occasionally, until completely melted. Let cool slightly. Whisk in sugar, espresso powder, vanilla, and eggs.
3. In a small bowl, whisk together flour, cinnamon, nutmeg, and salt. Add to the chocolate mixture, and stir until just combined (do not overmix). Fold in chocolate chips.
4. Pour into pan and bake until a toothpick inserted in the center comes out slightly wet, 30 to 35 minutes. Transfer to a wire rack; cool completely. Remove from pan. Using a damp, warm knife, cut into 16 squares, wiping knife blade after each cut. Peel off parchment paper and serve.

Per serving: 250 calories; 13.6 grams fat; 3.5 grams protein; 32 grams carbohydrates; 1.8 grams fiber
Note: Be careful not to overcook these brownies; they should be moist, not dry.

Update March 13, 07. Kalau pengen brownies dgn texture yg tdk terlalu padat, tambahkan 1/2 tsp baking powder dlm campuran terigu dkk. (udah sy coba lho).

Best Ever Banana MUFFINs

Punya pisang yg dah mateng bener... gak punya banyak wkt u/ ngolahnya.
Ya bisa di kupas, trus dimakan ajah. he..he.. Alternatif lain, bikin banana muffins ini. Judul di atas adalah judul asli yg ada di buku mungil Muffin Mania, dan konon resep ini merupakan salah satu resep 'very favorite' keluarga penulis buku ini, Cathy Prange & Joan Pauli.
Untuk keluarga sy, ... sy tambahin sedikit kismis/raisin dalam adonan, plus parutan keju di bagian atasnya. Keju ini stelah di panggang akan kering, dan memberi efek 'kriuk-kriuk' pada muffins. Walau dibikin dgn cara aduk2 aja, muffin ini cukup empuk sekalipun udah dingin.

3 large bananas
3/4 cup white sugar
1 egg
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1-1/2 cups all purpose flour
1/3 cup melted butter

1. Preheat oven to 180C.
Brush oil of 12 standart muffin tin or use paper cup.
2. MashBananas. Add sugar and slightly beaten egg.
Add melted butter.
Add the dry ingredients
(+raisin).
Stir gently until all dry ingredients are just moistened.
Batter should look quiter lumpy.
3. Spoon batter into each muffin tin (+greated cheddar cheese on top).
Bake 20 minutes.

Chocolate Chip MUFFINs

Sy termasuk penganut muffin 'aduk2 tanpa perlu dimixer'. Intinya hanya mencampur bahan basah ke dalam bahan2 kering. Muffins should be mixed as quickly and lightly as possible, only stirring to moisten. Batter should look lumpy. Hasilnya, ya muffin dgn texture yg khas. Kalo emang mengharapkan muffin dgn texture yg selembut cake, bikinlah cupcake.
Tadi pagi, bangun... ah belom ada sarapan. Kebetulan nyokap lagi mudik. (hi..hi.. sy mudik ke ortu, bonyok mudik ke kampung ortu-nya a.k.a nenek sy), jd gak bisa bermanja2 disiapin sarapan. Akhirnya cepet2 buka primbon... buku resep uzur nyokap terbitan th 1982, Muffin Mania by Cathy Prange & Joan Pauli.
Buat sy buku ini ajaib...Buku kecil tanpa gambar kecuali di cover buku. Isinya cuma resep yg diketik dgn huruf sambung (perkiraan sy diketik dgn mesin ketik listrik). Sangat sederhana kalau dibandingkan dgn buku resep masa kini. Ternyata hasilnya luar biasa, muffin yg hanya diaduk2 ini empuk bgt. Chocolate Chip Muffins ini cocok bgt u/ muffin sekaligus chocolate lover.

1-1/2 cups all purpose flour
1/2 cup white sugar
3 tsp baking powder
1/4 tsp salt
1 cup milk
1/3 cup melted butter
1 egg
1 cup chocolate chips (sy pake 3/4 cup)

Mix dry ingredients and add chocolate chips.
Combine egg, milk and butter and stir into flour mixture. Do not beat.
Bake 180 C for 20 minutes.

Cheese & Ham MUFFIN

Muffin for lunch? Why not!
Sy termasuk org yg suka bosen ama nasi. Tapi gak lama2 sih, paling 1-2 hari gak makan nasi, udah kangen lagih. Hari ini, udah wkt makan siang... tp sy gak pengen makan nasi.
Kebetulan di rumah nyokap ada 2 buku resep muffin~ yg dah uzur sebenarnya, tp super-duper komplit. Bentuknya pun gak kayag buku resep masa kini yg full of beautiful pictures.
Akhirnya dibikinlah muffin ini u/ lunch. Cepet bgt, cuma nyampur2 - ngaduk2 bentar, masukin ke cetakan muffin, 25 menit kemudian dah jadi. Sy makan bareng ama 1 bowl buah2an (melon-pisang-anggur) dah cukup ngenyangin. Satu hal yg sy temui di buku kecil ini, bahwa ngolesin margarin/minyakin loyang muffin cukup di bagian dasarnya ajah, sampingnya gak perlu diminyakin, spy adonan muffin bisa merayap naik dan membulat atasnya.
(mmm spt teory bikin siffon cake kali yah). Muffin ini 'cruncy' bagian luarnya dan empuk bagian dalamnya. Source: Muffins, Scones & TeaCakes~Family Circle

1-3/4 cups self-raising flour
2 tbsp caster sugar
1 tsp baking powder
1 cup greated Cheddar Cheese *
1/2 cup chopped ham
1 egg, lightly beaten
3/4 cup milk
1/3 cup butter, melted

1. Preheat oven to 180 C. Brush oil into bottoms only of twelve 6 cm muffin tin.
2. Sift flour, sugar and baking powder in a bowl and stir in cheese and ham.
In a small bowl combine egg, milk and melted butter and mix well.
Add liquids all at once to flour mixture.
3. Stir gently with fork until all dry ingredients are just moistened.
Batter should look quit lumpy.
4. Spoon butter into each muffin tin, filling 2/3 full.
Bake 20-25 minutes until golden brown.
Loosen muffins with spatula and remove at once to a wire rack. Serve warm
