Peanut Butter COOKIEs

Hasilnya, luar biasa... chewy nutty cookies. Enaaak bgt.
Kombinasi peanut butter dengan palm sugar (sy pake sbg pengganti brown sugar), oatmeal, peanut (sy pake pecan) dan chocolate chips bener2 'perfect.
Bikin cookies sebenarnya bukan pekerjaan yg sulit. Tapi perlu meluangkan wkt dan punya kesabaran yg cukup u/ nyendokin adonan satu2. Krn oven sy ukurannya lumayan kecil, jd sekali masuk cuma 9-12 cookies. Nyaris 2 jam u/ ngelarin cookies ini... hasilnya lebih dari 70an cookies sukses keluar dari oven 'tradisional'ku... sukses dijadiin cemilan selama weekend.
Buat penggemar peanut butter, rasanya resep ini patut dicoba.
Jangan coba2 bikin 1/2 resep ya... percayalah gak akan cukup!
Buat yg punya bakat 'asam urat', sorry bgt... sy gak rekomendasiin cookie ini u/ anda.

Prep: 25 min. Bake: 10 min. per batch.
3/4 cup butter, softened
1/2 cup peanut butter
1 cup granulated sugar
1/2 cup packed brown sugar *
1 tsp baking powder
1/2 tsp baking soda
2 eggs
1 tsp vanilla
1 1/4 cup all-purpose flour
1 1/2 cups quick-cooking rolled oats
1/2 cup chopped peanuts
3 ounces bittersweet or semisweet chocolate, coarsely chopped (1/2 cup) **
3/4 cup butter, softened
1/2 cup peanut butter
1 cup granulated sugar

1 1/2 cups quick-cooking rolled oats
1/2 cup chopped peanuts
3 ounces bittersweet or semisweet chocolate, coarsely chopped (1/2 cup) **
1. Preheat oven to 375 F.
2. In a large mixing bowl beat together butter and peanut butter with an electric mixer on medium speed for 30 seconds. (jangan terlalu lama dimixer kalo gak pengen cookie 'beleber' di oven)
Beat in sugars, baking powder, and baking soda until combined.
Beat in eggs and vanilla.
Beat in as much of the flour as you can with the mixer.
Stir in any remaining flour, the oats, peanuts, and chocolate with a wooden spoon. Drop dough by rounded teaspoon about 2 inches apart ounto ungreased cookie sheets.
3. Bake the preheated oven for 10-12 minutes or until edges are firm and tops are golden. Cool on cookie sheets for 2 minutes, remove and cool completely on wire rack.
To store: Place in layers separated by wax paper in an airtight container; cover. Store at room temperature up to 3 days or freezer up to 3 months.

* Untuk menggantikan brown sugar sy pake 1/4 cup palm sugar + 1/4 cup granulated sugar.
** Sy pake 1/2 cup chocolate chips.

Btw, Mbak..
Sejak postingan Muffin donat sebelum ini, saya kesulitan buka blog ini lho. Gak tau kenapa. Pokoknya blog gak pernah kebuka lengkap. Dan lambat banget. Sidebar juga gak muncul. Jadi kalo mau browsing resep lama susah. Trus biasanya mbak... setelah lama nunggu halamannya loading, internet explorernya jaddi hang... not responding. terpaksa saya tutup sebelum blog kebuka lengkap.
Sekarang juga nih blognya cuma sampe postingan Muffin Donnat doang.. itu pun gak lengkap, cuman separo doang. Kira kira kenapa ya mbak...

Iya, bbrp wkt yll blog gw ini sempet error (kayagnya berawal sejak gw posting Muffin~Donut). Gw gak ngerti detailnya, yg pasti abis itu sering nge-hang aja.
Akhirnya gw delete postingan Muffin~Donut, trus gw posting ulang. Ternyata... berhasil. Skarang udah lancar lg :)

... nah ketemu deeh.
Yg paling favorite di keluargaku, Coconut Swirl Brownies,Cappucino Brownies dan Brownie Cupcake.
sy nyetak cookie pake 2 biji sendok kecil (kayag bikin baso).
Idealnya emang pake sendok ice cream yg kecil, cuma sy gak punya :)
Biasanya begitu udah dijejerin di baking sheet keliatan kalo ada yg ukurannya beda ama yg lain, tinggal dikurangi dikit atau ditambahin adonan dikit.

Poppy, sy biasa pake konversi spt ini:
Mentega 1 sdm = 15 g,1 cup = 225 g
Margarin 1 sdm = 15 g,1 cup = 225 g
Nah, biasanya sy pake orchid butter yg balokan. Satu blok itu 227 gr. Jd kira2 sebanding dgn 1 cup. Selanjutnya disesuaikan ajah... kalo 1/2 cup tinggal bagi 2 sama rata, dst.
