Cheddar Cornmeal MUFFIN
Ini sebenarnya muffin bikinan bulan lalu. Salah satu proyek nyedian cemilan selama anak2 liburan. Maklum, kalo lagi di rumah (mana sekarang hujan melulu lagi) mereka bawaannya bolak-balik buka kulkas, buka lemari, toples... nyari makanan.
Menariknya, ini pertama kali gw nyobain yg namanya 'cornmeal'. Tepung jagung berwarna kuning. Belum pernah nemu sebelumnya, ternyata di sini cukup banyak tersedia. Lumayan u/ memberi rasa yg agak beda.
Muffin ini texture-nya agak padat, dari keju yg sempat meleleh saat dipanggang dan kemudian menjadi padat ketika dingin.

1 cup all purpose flour
1/2 cup corn meal
1 tsp baking powder
1/2 tsp salt
pinch cayenne (tdk sy pakai)
1 cup milk
1 egg
1/4 cup melted butter or margarine
1 1/2 cups grated sharp cheddar cheese
Stir togetbner flour, coar meal, baking powder, salt and cayenne.
Beat egg with milk and butter and add to dry ingredients stirring to moisten.
Stir in 1 cup cheese and spoon into greased muffin cups. Sprinkle with remaining cheese.
Bake 375 F for 15-20 minutes.

Serve hot with butter or freeze and reheat before serving. These are delicious with homemade soups, chillli, or salts. For a yummy variation, add 1/2 cup cooked, crumbled bacon to the batter.
Ya udah... gw mo bikin muffin ini lagi, buat disimpen di freezer buat suamiku sarapan atau u/ nemenin Champbells Soup kalo lagi dingin2, selama gw mudik :)
